Lazy Lasagna with Hidden Veggies – A Mom’s Cozy Kitchen Hack

 



Some nights, the clock outruns us. And on those nights, we need a dinner that doesn’t ask much—but still delivers big. That’s where this Lazy Lasagna comes in: a no-fuss, veggie-packed, pasta-hack recipe that keeps little tummies happy and picky eaters clueless (shhh… we won’t tell if you won’t).


This one is a Gracefully Momming favorite because it saves time, skips the lasagna sheets (hallelujah!), and sneaks in three different veggies without a whisper of complaint from the kiddos.

Ingredients:


Sauce:


1 onion, finely chopped


Sweet peppers (any color you have)


1 clove garlic, minced


500g beef mince


1 grated carrot


1 grated zucchini


Tomato pasta sauce (your favorite brand or homemade)


Spices: any spices you usually use in your food and paprika, sweet basil, origanum—adjust to taste



Pasta:


Spaghetti (yes, really!) — cooked and ready to layer



White Sauce:


1 cup butternut (boiled and mashed)


1 cup heavy cream


Salt and pepper to taste



Topping:


Grated cheese (cheddar, mozzarella, or whatever’s in the fridge!)

How to Make It:


1. Sauté onions, peppers, and garlic until soft and fragrant.



2. Add beef mince, and once it’s browned, mix in the grated carrot and zucchini.



3. Stir in your tomato pasta sauce and let it simmer with your favorite herbs and spices.



4. While that’s bubbling, boil your butternut, mash it, and mix it into a creamy sauce with heavy cream.



5. Cook your spaghetti until soft (we’re breaking all the lasagna rules here, and it’s fabulous).



6. Layer everything in an ovenproof dish:


Spaghetti


Meat sauce


Butternut white sauce


Repeat




7. Top with cheese and bake until golden, bubbly, and heavenly.
